Ingredients
Flour tortillas
Cheese (preferably cheddar or Mexican blend)
Black beans
Bell peppers (orange and green)
Olive oil
Sour cream (for serving)
Salsa (for serving)
Instructions
1. Preheat a skillet over medium heat.
2. Place a tortilla in the skillet and sprinkle cheese on one half.
3. Add black beans and diced bell peppers over the cheese.
4. Fold the tortilla over and cook 2-3 minutes per side until golden and the cheese is melted.
5. Remove from skillet and carefully cut jack-o-lantern faces into the tortilla.
6. Serve warm with sour cream and salsa on the side.
Notes
Serve warm on a festive platter with dipping sauces.
Store leftovers in the fridge up to 2 days; reheat in a skillet or microwave.
