Ingredients
3 boneless, skinless chicken breasts (600g)
4 large flour tortillas
2 cups shredded cabbage (green or red)
1 ripe avocado, sliced
Juice and zest of 2 limes
4 garlic cloves, minced
1 tbsp ground cumin
1 tbsp chili powder
1 tsp salt
2 tbsp white vinegar
1/4 cup chopped fresh cilantro
2 tbsp olive oil
1 red onion, thinly sliced (optional)
1 jalapeño, seeded and sliced (optional)
Instructions
Combine lime juice, vinegar, minced garlic, cumin, chili powder, salt, and cilantro in a bowl to create marinade
Add chicken breasts and let marinate for 15 minutes
Heat olive oil in a cast iron skillet or griddle
Sear chicken breasts over high heat on both sides until deeply charred (3-4 minutes total)
Microwave tortillas for 30 seconds to soften
Assemble tacos with cabbage, hot chicken, avocado, lime zest, and jalapeño if using
