Description
A cozy, comforting dish featuring marinated tofu baked to perfection, paired with quick-pickled onions and a refreshing minty green chutney.

- 1 medium red onion, thinly sliced
- 1 tbsp lemon juice, plus lemon wedges to serve
- 1 tbsp white vinegar
- Pinch sea salt
- Pinch sugar
- 700 g firm tofu, drained and pressed
- 150 g thick vegan yogurt
- 1 tbsp lemon juice
- 1 tbsp neutral oil
- 2 tsp ginger garlic paste
- 2 tsp tandoori masala powder
- 1 tsp Kashmiri chili powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp garam masala
- 3/4 tsp fine sea salt
- 40 g fresh coriander leaves and tender stems
- 10 g fresh mint leaves
- 1 small green chili, deseeded
- 1 small clove garlic
- 2 tbsp lemon juice
- 4 tbsp vegan yogurt
- 1 tbsp water
- Pinch sugar
- Pinch salt
- 1 tbsp chopped coriander, to finish
Instructions
- In a small bowl, combine the sliced red onions with lemon juice, white vinegar, sea salt, and sugar. Scrunch gently until onions soften and turn pink. Set aside.
- Press the tofu to remove moisture and cut into 3 cm cubes. In a large bowl, whisk together yogurt, lemon juice, oil, ginger garlic paste, tandoori masala, chili powder, cumin, coriander, turmeric, garam masala, and salt. Coat tofu in marinade and let sit for 20 minutes.
- Preheat oven to 220°C (fan 200°C). Line a baking tray with foil and place a wire rack over it. Arrange marinated tofu on the rack and bake for 12-15 minutes, flipping halfway through until charred and tender.
- While tofu bakes, blend coriander, mint, green chili, garlic, lemon juice, yogurt, water, sugar, and salt until creamy. Serve baked tofu with pickled onions, minty chutney, and a sprinkle of coriander.
Notes
Press tofu well for a firmer texture. Marinating longer than 20 minutes enhances flavor.
