- 1/3 cup vegetable oil
- 1/4 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- Zest of 1 lemon
- 1/4 cup lemon juice
- 1 cup powdered sugar
- 2 tablespoons lemon juice (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the vegetable oil, milk, egg, vanilla extract, lemon zest, and lemon juice until smooth.
- Combine the wet ingredients with the dry ingredients, stirring gently, then fold in the blueberries.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack. For the glaze, whisk powdered sugar and lemon juice, and drizzle over the cooled bread.
