- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- 2 minced garlic cloves
- 2 teaspoons dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 boneless skinless chicken breasts (about 6 ounces each)
- 1 1/2 pounds yellow potatoes, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt (plus more to taste)
- 1 teaspoon black pepper (plus more to taste)
- 4 small zucchinis, sliced into 1-inch pieces
Instructions
- In a large bowl, whisk together the fresh lemon juice, olive oil, minced garlic, dried oregano, paprika, salt, and black pepper. Marinate the chicken for at least 30 minutes.
- Preheat the oven to 400°F (200°C). Toss the yellow potatoes with olive oil, garlic powder, salt, and black pepper, and roast for 25-30 minutes.
- Heat a skillet over medium-high heat. Cook the marinated chicken breasts for 6-7 minutes on each side until cooked through. Remove from skillet and let rest before slicing.
- Add the sliced zucchinis to the skillet and sauté for 4-5 minutes until tender.
Notes
You can substitute the chicken with beef, turkey, or tofu. Feel free to mix in your favorite veggies.
