Ingredients

  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 2 minced garlic cloves
  • 2 teaspoons dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 boneless skinless chicken breasts (about 6 ounces each)
  • 1 1/2 pounds yellow potatoes, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt (plus more to taste)
  • 1 teaspoon black pepper (plus more to taste)
  • 4 small zucchinis, sliced into 1-inch pieces

Instructions

  1. In a large bowl, whisk together the fresh lemon juice, olive oil, minced garlic, dried oregano, paprika, salt, and black pepper. Marinate the chicken for at least 30 minutes.
  2. Preheat the oven to 400°F (200°C). Toss the yellow potatoes with olive oil, garlic powder, salt, and black pepper, and roast for 25-30 minutes.
  3. Heat a skillet over medium-high heat. Cook the marinated chicken breasts for 6-7 minutes on each side until cooked through. Remove from skillet and let rest before slicing.
  4. Add the sliced zucchinis to the skillet and sauté for 4-5 minutes until tender.

Notes

You can substitute the chicken with beef, turkey, or tofu. Feel free to mix in your favorite veggies.
