Ingredients
12 cups tortilla chips (store-bought or homemade)
2 cups shredded Monterey Jack cheese (sub cheddar if needed)
1 lb extra lean ground turkey
8–10 dried chilies (Poblano/Ancho) or 1/2 cup canned diced chilies
1 can (15 oz) black beans (rinsed)
2 cups diced tomatoes
2 avocados, sliced (add before serving)
1 tbsp olive oil
2 cloves garlic
1 tsp ground cumin
1 tsp salt
1/2 tsp smoked paprika
Instructions
Preheat oven to 375°F (190°C)
Add 4 cups chips to a large baking dish as base
In skillet, toast dried chilies 1-2 minutes; soak in hot water 20 minutes
Blend softened chilies, olive oil, garlic, cumin, salt, and paprika until smooth
In same skillet, cook ground turkey over medium heat until browned; add chili mixture and simmer 10 minutes
In separate skillet, sauté black beans 5 minutes with 1 tsp cumin and salt
Spread 1 cup cheese over chips, then layer turkey chili, beans, tomatoes, and remaining cheese
Bake 10-12 minutes until golden and bubbly
Add fresh tomato slices, avocado, and chipotle oyster dressing (no alcohol)
Sprinkle remaining chips on top before serving
Notes
Use homemade chips for extra crispiness
For extra heat, add jalapeños or serrano peppers
