Description

A creamy, cheesy soup made with soft potatoes, rich cheddar cheese, and a hint of tang from sour cream. Perfect for chilly days!


Ingredients

  • 4 large potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked turkey bacon, crumbled
  • 1/2 cup sour cream
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste

Instructions

  1. In a large pot, add diced potatoes and chicken broth. Bring to a boil and cook until potatoes are tender, about 15 minutes.
  2. Once tender, mash some of the potatoes in the broth to give the soup a thicker texture.
  3. Stir in the milk, cheddar cheese, and cooked turkey bacon, mixing well until the cheese melts and everything is smoothly combined.
  4. Season with salt and pepper to taste.
  5. Serve hot, garnished with sliced green onions.

Notes

You can make this soup ahead of time and refrigerate. It can also be frozen; just blend in the dairy after thawing.
