- 4 large potatoes, peeled and diced
- 4 cups chicken broth
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup cooked turkey bacon, crumbled
- 1/2 cup sour cream
- 1/4 cup green onions, sliced
- Salt and pepper to taste
Instructions
- In a large pot, add diced potatoes and chicken broth. Bring to a boil and cook until potatoes are tender, about 15 minutes.
- Once tender, mash some of the potatoes in the broth to give the soup a thicker texture.
- Stir in the milk, cheddar cheese, and cooked turkey bacon, mixing well until the cheese melts and everything is smoothly combined.
- Season with salt and pepper to taste.
- Serve hot, garnished with sliced green onions.
Notes
You can make this soup ahead of time and refrigerate. It can also be frozen; just blend in the dairy after thawing.
