Description
A simple, hearty, and satisfying low-carb cheeseburger casserole, perfect for busy families.
Ingredients
Scale
- 1 pound ground beef
- 6 strips turkey bacon or beef bacon, diced
- 1/2 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 cups shredded cheddar cheese, divided
- 4 large eggs
- 1/2 cup heavy cream
- 1 tablespoon yellow mustard
- 1 tablespoon Worcestershire sauce
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Chopped green onions and diced tomatoes (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Cook the diced turkey bacon in a skillet over medium heat until crisp. Remove with a slotted spoon, leaving the grease.
- Sauté the chopped onion and minced garlic in the bacon grease until translucent. Add ground beef and cook until browned. Drain excess grease and stir in crispy bacon.
- In a bowl, whisk together eggs, heavy cream, yellow mustard, Worcestershire sauce, salt, and black pepper until combined.
- Grease an 8×8-inch baking dish. Spread the beef mixture in the dish, sprinkle with 1 cup of cheddar cheese, and pour the egg mixture on top. Add the remaining cup of cheese on top.
- Bake in the preheated oven for 25-30 minutes until bubbly and golden brown. Let cool slightly before slicing. Garnish with green onions and tomatoes if desired.
Notes
Feel free to swap ground beef for turkey or chicken, and use turkey bacon for a leaner option. Consider using almond milk or coconut cream for a dairy-free version.
