- 1 lb chicken breasts
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 1 cup heavy cream (optional)
- Fresh parsley for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the onion, garlic, carrots, and celery; sauté until the vegetables are soft.
- Add the chicken breasts to the pot along with the chicken broth, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and let simmer until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- For a creamier soup, stir in the heavy cream.
- Garnish with fresh parsley before serving.
Notes
For more flavor, you can add a splash of lemon juice or a bit of fresh lemon zest to the soup right before serving. You can also add other vegetables like spinach or peas for extra nutrition.
