Ingredients

  • 1 lb chicken breasts
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 1 cup heavy cream (optional)
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion, garlic, carrots, and celery; sauté until the vegetables are soft.
  2. Add the chicken breasts to the pot along with the chicken broth, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and let simmer until the chicken is cooked through.
  3. Remove the chicken, shred it, and return it to the pot.
  4. For a creamier soup, stir in the heavy cream.
  5. Garnish with fresh parsley before serving.

Notes

For more flavor, you can add a splash of lemon juice or a bit of fresh lemon zest to the soup right before serving. You can also add other vegetables like spinach or peas for extra nutrition.
