Description

Flavor-packed Mediterranean chicken patties, easy to prepare and perfect for a cozy dinner.


Ingredients

  • 3 tablespoons olive oil, divided
  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 1 lb. ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and stir for an additional 30 seconds until fragrant.
  2. In a large mixing bowl, combine sautéed onions and garlic with spinach, ground chicken, breadcrumbs, yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and black pepper. Mix until well combined.
  3. Scoop out roughly 1/4 cup of the mixture and shape it into approximately 8 patties. Heat remaining olive oil in the skillet over medium heat. Cook patties for about 5-6 minutes on each side until golden brown and cooked through. Let them drain on paper towels before serving.

Notes

These patties can be made gluten-free by using gluten-free breadcrumbs. They freeze well for up to 3 months.
