Flavor-packed Mediterranean chicken patties, easy to prepare and perfect for a cozy dinner.

- 3 tablespoons olive oil, divided
- 1 medium onion, diced
- 1 tablespoon garlic, minced
- 1 cup baby spinach, chopped
- 1 lb. ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup Greek yogurt
- 2 tablespoons fresh dill, finely chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and stir for an additional 30 seconds until fragrant.
- In a large mixing bowl, combine sautéed onions and garlic with spinach, ground chicken, breadcrumbs, yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and black pepper. Mix until well combined.
- Scoop out roughly 1/4 cup of the mixture and shape it into approximately 8 patties. Heat remaining olive oil in the skillet over medium heat. Cook patties for about 5-6 minutes on each side until golden brown and cooked through. Let them drain on paper towels before serving.
Notes
These patties can be made gluten-free by using gluten-free breadcrumbs. They freeze well for up to 3 months.
