- 1/4 cup breadcrumbs

- 2 tbsp olive oil
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup kalamata olives, pitted and halved
- 2 tbsp lemon juice
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C). In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan, egg, minced garlic, oregano, salt, and pepper. Use your hands to mix gently until well blended, being careful not to overwork it. Form the mixture into bite-sized meatballs and set aside on a baking sheet lined with parchment paper.
- Prepare the potatoes by tossing cubed potatoes with olive oil and seasoning with salt and pepper. Spread them out on another baking sheet to crisp in the oven. Bake both the meatballs and the potatoes for 25-30 minutes, until cooked through and browned.
- Combine diced cucumber, halved cherry tomatoes, thinly sliced red onion, crumbled feta cheese, and kalamata olives in a large bowl. Drizzle with lemon juice and season to taste with salt and pepper, tossing to meld the flavors.
