- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda

- 1 ½ cups mint chocolate chips
- Green food coloring (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar in a large mixing bowl until fluffy (about 2-3 minutes).
- Add eggs one at a time, blending well after each addition, then add vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture, stirring until just combined.
- Fold in the mint chocolate chips and green food coloring if using.
- Drop spoonfuls of dough onto a baking sheet and bake for 10-12 minutes, until golden around the edges but soft in the center.
Notes
Chill dough for 30 minutes for better texture. Store cookies in an airtight container for up to a week.
