Ingredients

  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups mint chocolate chips
  • Green food coloring (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar in a large mixing bowl until fluffy (about 2-3 minutes).
  3. Add eggs one at a time, blending well after each addition, then add vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture, stirring until just combined.
  5. Fold in the mint chocolate chips and green food coloring if using.
  6. Drop spoonfuls of dough onto a baking sheet and bake for 10-12 minutes, until golden around the edges but soft in the center.

Notes

Chill dough for 30 minutes for better texture. Store cookies in an airtight container for up to a week.
