A comforting and easy one-pan dish that combines honey butter garlic chicken with fluffy rice, perfect for busy weeknights.


Ingredients

  • 1.5 lbs boneless skinless chicken thighs
  • 1 cup white rice (uncooked)
  • 4 cloves garlic, minced
  • 3 tablespoons honey
  • 3 tablespoons unsalted butter
  • 2 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh parsley (optional)
  • Salt and black pepper, to taste
  • 3 slices lemon (optional, for garnish)

Instructions

  1. Season the chicken thighs with salt and pepper. In a large skillet over medium-high heat, add the olive oil. Sear the chicken thighs until golden brown and nearly cooked through, about 5-6 minutes per side. Remove from skillet and set aside.
  2. In the same skillet, reduce heat to medium and add the butter and minced garlic. Cook until fragrant, about 1-2 minutes. Stir in honey and soy sauce to create a glaze.
  3. Add the uncooked rice to the pan and stir to coat with the sauce. Pour in the chicken broth and mix briefly. Nestle the chicken thighs back into the skillet, cover, and reduce heat to low. Let simmer for about 18-22 minutes, or until rice is tender and liquid is absorbed.
  4. Once done, fluff the rice with a fork and sprinkle with chopped parsley. Optionally, add lemon slices for garnish.

Notes

For a healthier twist, consider swapping chicken thighs for skinless chicken breasts. Adjust cooking times if using different cuts of chicken.
