A comforting one-pot dish of creamy orzo pasta with broccoli and cheddar cheese, perfect for family meals.

- 1 cup orzo pasta
- 2 cups vegetable or chicken broth
- 1 cup broccoli florets
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Optional: Freshly ground black pepper and extra cheddar for garnish
Instructions
- In a large pot, warm the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Add minced garlic and garlic powder, cooking for another minute. Toss in the orzo and toast for 1-2 minutes.
- Pour in the broth and bring to a gentle boil. Reduce heat to a simmer, add broccoli, cover, and cook for 8-10 minutes.
- Once orzo is tender, remove from heat and stir in heavy cream and cheddar cheese until creamy. Season with salt and pepper.
- Serve in bowls, garnished with extra cheddar and black pepper, and enjoy warm.
Notes
Feel free to substitute heavy cream with a non-dairy alternative or add cooked protein for a heartier meal. Can be stored in the fridge for up to three days.
