Description

A comforting one-pot dish of creamy orzo pasta with broccoli and cheddar cheese, perfect for family meals.


Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable or chicken broth
  • 1 cup broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: Freshly ground black pepper and extra cheddar for garnish

Instructions

  1. In a large pot, warm the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  2. Add minced garlic and garlic powder, cooking for another minute. Toss in the orzo and toast for 1-2 minutes.
  3. Pour in the broth and bring to a gentle boil. Reduce heat to a simmer, add broccoli, cover, and cook for 8-10 minutes.
  4. Once orzo is tender, remove from heat and stir in heavy cream and cheddar cheese until creamy. Season with salt and pepper.
  5. Serve in bowls, garnished with extra cheddar and black pepper, and enjoy warm.

Notes

Feel free to substitute heavy cream with a non-dairy alternative or add cooked protein for a heartier meal. Can be stored in the fridge for up to three days.
