Description

Outback Potato Soup is a creamy, hearty, and comforting dish made with baked potatoes, cheese, sour cream, and green onions. Perfect for chilly nights, family dinners, or when you crave something cozy and satisfying!

Ingredients

Scale

4 large baking potatoes

1/2 cup butter

1/2 cup all-purpose flour

4 cups chicken broth

2 cups milk

1 cup sour cream

1 cup shredded cheddar cheese

1/2 cup green onions, chopped

Salt and pepper to taste

Instructions

1. Preheat oven to 400°F (200°C) and bake potatoes for 1 hour until fork-tender. Let cool, then peel and chop.

2. In a large pot, melt butter over medium heat. Stir in flour and cook for 2 minutes.

3. Gradually add chicken broth and milk, stirring until thickened (about 5 minutes).

4. Add chopped potatoes, sour cream, and half the cheese. Stir to combine.

5. Season with salt and pepper to taste.

6. Serve hot topped with remaining cheese and green onions.

Notes

Serve with crusty bread or a fresh salad for a complete meal.

Refrigerate leftovers up to 3 days or freeze up to 2 months.

Reheat on stove with a splash of milk to restore creaminess.

Add veggies like broccoli or carrots for extra nutrition.

For a spicy kick, add jalapeños or hot sauce!
