  • 1 tbsp butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tbsp all-purpose flour
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1 tbsp tomato paste
  • 1 tsp Dijon mustard
  • 1 tbsp chopped fresh parsley (plus more for garnish)
  • 2 cups cooked white rice

Instructions

  1. Preheat your oven to 400°F (200°C). Pat the chicken drumsticks dry and season with salt, pepper, and smoked paprika.
  2. In a large ovenproof skillet, heat olive oil over medium-high heat. Sear the chicken drumsticks on all sides until golden brown (about 5–6 minutes).
  3. Transfer the skillet to the preheated oven and roast the chicken for 20–25 minutes or until fully cooked.
  4. Meanwhile, in a separate saucepan, melt butter over medium heat. Add onion and garlic, sautéing until translucent (3-4 minutes).
  5. Mix in thyme and optional crushed red pepper flakes, then add flour. Cook for about a minute.
  6. Slowly whisk in chicken broth, then add heavy cream, tomato paste, and Dijon mustard. Simmer for 5–6 minutes and fold in chopped parsley.
  7. Once chicken is done, return the skillet to the stovetop and pour the creamy sauce over the drumsticks. Simmer together for 2–3 minutes.
  8. Serve the creamy paprika chicken over cooked rice, garnished with fresh parsley.

Notes

For lighter options, use half-and-half or coconut cream instead of heavy cream. Substitute chicken drumsticks with thighs for richer flavor.
