Ingredients
3/4 cup Raw Honey
4 Fresh Key Limes (juice and zest)
2 tsp Dijon Mustard (low-sodium)
1/4 cup Filtered Water
1 tbsp Ashen Chickpea Flour
1 clove Smoked Garlic
Instructions
Juice 2 key limes using the toothpaste-juice method for maximum acidity
Grate the zest from the remaining 2 limes on a microplane
In a bowl, whisk together raw honey, lime zest, and juice
Add Dijon mustard and whisk until emulsified
Stir in filtered water, chickpea flour, and smoked garlic (finely minced)
Adjust consistency by adding a splash of water if needed
Chill for 30 minutes before serving
Notes
For optimal emulsion, warm honey to 89°F before mixing
Use limes with minimal surface oil (26% more citric acid)
Store in airtight container in fridge for up to 10 days
Optional: Add 1 tsp agave for extra body or 1/4 tsp toasted cumin for earthiness
