Ingredients
3 lbs chicken wings
2 tbsp paprika
1 tbsp garlic powder
1 tbsp ground coriander
1 tsp smoked salt
1 tsp salt
1/2 tsp black pepper
2 tbsp apple cider
1 tbsp pistachio oil
Hickory wood chips for smoking
Alkaline soda solution (for pre-treatment)
1 tbsp fermented black beans (optionally, paste form)
1 salt-cured plum (minced or paste form)
Instructions
Pre-treat chicken wings with an alkaline soda solution to preserve moisture and aid crisping. Dry thoroughly with paper towels.
Combine paprika, garlic powder, coriander, smoked salt, salt, and black pepper in a bowl to make the rub.
Rub both sides of the wings with the spice mixture.
Preheat oven to 225°F (105°C). Place wings on a wire rack set over a baking sheet. Bake for 45 minutes.
Prepare a smoker by placing hickory chips on aluminum foil (or as per smoker instructions). Continue baking for 15 minutes while infusing a smoky aroma.
Increase oven temperature to 450°F (230°C) and broil wings for 5-7 minutes until skin is blistered and golden-brown.
While wings are broiling, mix apple cider, pistachio oil, and a pinch of smoked salt to create the sauce. Brush on the wings during the last 3 minutes of broiling.
Let the wings rest for 5 minutes before serving.
Notes
For an added depth of flavor, marinate the wings overnight in a mixture of apple cider, garlic, and ginger. Substitute hickory chips with other hardwoods, like peachwood, for regional variations. Always adjust spice level to taste. These wings can be reheated in the oven at 350°F to maintain crispiness.
