- 2 slices of your favorite bread (sourdough, whole grain, or gluten-free)
- 2 tablespoons of pesto (store-bought or homemade)
- 2 slices of cheese (such as cheddar or mozzarella)
- 1 tablespoon of butter (or olive oil)
Instructions
- Spread the pesto generously on one side of each slice of bread.
- Heat a skillet over medium heat, then place one slice of bread pesto-side up in the pan. Layer cheese on top.
- Top with the second slice of bread, pesto-side down.
- Butter the outside of the sandwich, then cook until golden brown; flip and cook the other side until browned and cheese is melted.
