Instructions

- Combine in a medium bowl 1 ½ cups all-purpose flour, 1 teaspoon baking powder, and 1 teaspoon salt.
- Cream ½ cup softened unsalted butter and 1 cup granulated sugar until light and fluffy. Add eggs one at a time, followed by 1 teaspoon of vanilla extract.
- Fold in ½ cup sour cream and then gradually add the dry mixture, mixing gently to avoid overmixing.
- Incorporate the well-drained crushed pineapple into the batter.
- Transfer the batter into the prepared cake pan and bake for about 30-35 minutes, checking for doneness with a toothpick.
- Whisk together ½ cup powdered sugar and 2 tablespoons pineapple juice to create a glaze while the cake bakes.
- Pour the glaze over the cooled cake, allowing it to drizzle down the sides.

For a healthier option, substitute Greek yogurt for sour cream and consider using a sugar substitute.
