  • Maraschino cherries (1 for each pineapple slice)

  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup milk (or your choice of non-dairy milk)
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.
  2. Melt the butter in a saucepan, then pour it into the cake pan.
  3. Sprinkle the brown sugar evenly over the melted butter.
  4. Arrange the pineapple slices over the sugar and place a Maraschino cherry in the center of each slice.
  5. In a large bowl, combine the flour, granulated sugar, baking powder, and salt.
  6. Whisk the milk, eggs, and vanilla extract in a separate bowl until blended.
  7. Add the wet ingredients to the dry ingredients and stir until just combined.
  8. Pour the batter over the pineapple layer in the pan.
