- 1 cup brown sugar
- 1 can (20 oz) sliced pineapple, drained
- Maraschino cherries (1 for each pineapple slice)
- 1 1/2 cups all-purpose flour

- 3 1/2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup milk (or your choice of non-dairy milk)
- 2 large eggs
Instructions
- Preheat the oven to 350°F (175°C) and grease a round cake pan.
- Melt the butter in a saucepan, then pour it into the cake pan.
- Sprinkle the brown sugar evenly over the melted butter.
- Arrange the pineapple slices over the sugar and place a Maraschino cherry in the center of each slice.
- In a large bowl, combine the flour, granulated sugar, baking powder, and salt.
- Whisk the milk, eggs, and vanilla extract in a separate bowl until blended.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Pour the batter over the pineapple layer in the pan.
- Bake for 35-40 minutes, or until a toothpick comes out clean.
- Cool for about 10 minutes before inverting onto a serving plate.
Notes
For a healthier twist, substitute butter with coconut oil. Use fresh pineapple for a more vibrant flavor.
