Ingredients

- 1 cup pomegranate juice (fresh or store-bought)
- 2 tablespoons sugar
- 1 teaspoon lemon juice
- 1 tablespoon gelatin powder
- 3 tablespoons cold water
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Pomegranate seeds for garnish
- Optional: Chocolate or silver flakes for decoration
Instructions
- Prepare the pomegranate mixture by combining pomegranate juice, sugar, and lemon juice in a saucepan over low heat until the sugar dissolves. Let cool.
- Bloom the gelatin by sprinkling it over cold water, letting it sit for 5 minutes, then mixing it with the warm pomegranate juice.
- In a separate bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and vanilla, whipping to stiff peaks.
- Gently fold the cooled pomegranate mixture into the whipped cream until just combined.
- Grease silicone molds, pour the mixture in, tap to release air bubbles, cover, and refrigerate for at least 4 hours or overnight to set.
- Once set, remove from molds, garnish with pomegranate seeds and optional chocolate or silver flakes, and serve chilled.
Notes
For a vegetarian option, substitute gelatin with agar-agar. Store in the refrigerator for up to three days, or freeze for longer storage.
