Description

Ingredients

  • 6 large Idaho or Maris Piper potatoes
  • 12 quarts water
  • ½ tbsp salt (for boiling)
  • ¼ cup olive oil
  • 1 tsp kosher salt
  • ⅛ tsp freshly ground pepper
  • 1 ½ tsp caraway seeds
  • ½ tsp paprika (optional)
  • ½ tsp dry rosemary (or 1 tbsp fresh, if using)
  • ½ tbsp salt (to season water)

Instructions

  1. Preheat oven to 425°F (220°C). Peel (optional) and cut potatoes into quarters.
  2. Place potatoes in a pot, add water and ½ tbsp salt. Boil for 10-15 minutes until fork-tender.
  3. Drain and let steam dry for 1 minute. Toss in a bowl with olive oil, kosher salt, pepper, caraway seeds, paprika, and rosemary.
  4. Place seasoned potatoes on a parchment-lined baking sheet in a single layer. Roast for 25-30 minutes, flipping halfway, until crispy and golden.
