- 6 large Idaho or Maris Piper potatoes
- 1–2 quarts water
- ½ tbsp salt (for boiling)
- ¼ cup olive oil
- 1 tsp kosher salt
- ⅛ tsp freshly ground pepper
- 1 ½ tsp caraway seeds
- ½ tsp paprika (optional)
- ½ tsp dry rosemary (or 1 tbsp fresh, if using)
- ½ tbsp salt (to season water)
Instructions
- Preheat oven to 425°F (220°C). Peel (optional) and cut potatoes into quarters.
- Place potatoes in a pot, add water and ½ tbsp salt. Boil for 10-15 minutes until fork-tender.
- Drain and let steam dry for 1 minute. Toss in a bowl with olive oil, kosher salt, pepper, caraway seeds, paprika, and rosemary.
- Place seasoned potatoes on a parchment-lined baking sheet in a single layer. Roast for 25-30 minutes, flipping halfway, until crispy and golden.
Notes
Ensure potatoes are cut evenly for consistent cooking. Allow to cool slightly before serving for extra crispiness.
