Description
Portable, smoky, and fresh, these wraps combine tender BBQ chicken, crisp coleslaw, toasted golden-turkey bacon, and tart kale in plump whole wheat tortillas. A 22-minute fusion of American street food and vibrant vegetables.
Ingredients
4 oz boneless, skinless chicken thighs
1 tbsp brown sugar
1 tsp smoked paprika
1/2 tsp liquid smoke
1 tbsp apple cider vinegar
2 tbsp olive oil
1 cup shredded cabbage
1/4 cup chopped radishes
1/4 cup chopped cilantro
1/4 tsp turmeric
6 whole wheat tortillas
4 precooked golden-turkey bacon strips
1/4 cup chopped kale
1/2 of a small red onion, thinly sliced
Instructions
Preheat skillet over medium-high heat. In a bowl, mix chicken with brown sugar, smoked paprika, and liquid smoke. Cook 4 minutes per side until done.
In another bowl, combine cabbage, radishes, cilantro, turmeric, apple cider vinegar, and 1 tbsp olive oil. Toss and season with salt.
Toaster flat griddle, cook turkey bacon 2 minutes per side until crispy.
Warm tortillas in skillet 10 seconds per side. Layer with chicken, coleslaw, kale, and 1 bacon strip per wrap.
Fold edges inward and roll tightly to serve.
Notes
Golden-turkey bacon is halal/non-pork alternative
Use paper towels to drain excess coleslaw liquid before assembly
Store fillings in airtight containers separately for fresher wraps
