Ingredients

  • 1 lb chicken breast or thighs, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 3 tbsp honey
  • 4 garlic cloves, minced
  • 1 tsp grated ginger
  • 1/2 tsp red chili flakes (optional)
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 8 oz noodles (use rice noodles or egg noodles)
  • 2 green onions, chopped
  • 1 tsp sesame seeds (optional)

Instructions

  1. In a medium bowl, whisk together the soy sauce, honey, minced garlic, and grated ginger. Add red chili flakes if desired.
  2. Toss chicken pieces in cornstarch until evenly coated.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook for 6-8 minutes until golden brown and cooked through.
  4. Pour the prepared sauce over the chicken and simmer for 2-3 minutes until thickened.
  5. Cook the noodles according to package instructions, drain, and set aside.
  6. Add the cooked noodles to the skillet and toss to combine. Garnish with green onions and sesame seeds before serving.

Notes

For a healthier version, use low-sodium soy sauce or substitute honey with maple syrup. Leftovers can be stored in the refrigerator for up to three days.
