- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1/4 cup heavy cream
- 1 cup heavy cream (for ganache)
- 1 cup semi-sweet chocolate chips
- 1 lb fresh strawberries, hulled and sliced
- 1/4 cup strawberry jam (optional, for extra shine)
Instructions
- Preheat your oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs and the granulated sugar. Drizzle in the melted butter and mix until evenly moistened. Press the mixture into the bottom of a 9-inch springform pan. Bake for about 10 minutes, then cool.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and vanilla extract, mix well. Add the eggs one at a time and mix carefully. Add the sour cream and heavy cream, mixing until smooth. Pour the cheesecake batter over the cooled crust and bake for 55-60 minutes.
- Turn off the oven and let the cheesecake cool gradually for about an hour. Refrigerate for at least 4 hours (overnight is best).
- Heat the heavy cream in a saucepan until it simmers. Pour over chocolate chips and stir until smooth to make ganache. Let cool until thickened, then pour over the cheesecake.
- Top with sliced strawberries. If desired, warm strawberry jam and brush over the strawberries for shine.
Notes
Allow the cheesecake to cool gradually in the oven to prevent cracks. Use room temperature cream cheese for the best texture.
