Description

A nostalgic, sweet treat made with tender sweet potatoes and creamy peanut butter, rolled in shredded coconut.


Ingredients

  • 2 medium sweet potatoes (about 1 lb)
  • 1 cup creamy peanut butter (or almond butter for a twist)
  • 1/2 cup powdered sugar (adjust based on your sweetness preference)
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut (sweetened or unsweetened)
  • A pinch of salt

Instructions

  1. Peel and chop the sweet potatoes into chunks. Place in a pot and cover with water. Bring to a boil and cook for 15-20 minutes until fork-tender. Drain and mash until smooth.
  2. While warm, mix in peanut butter, powdered sugar, vanilla extract, and salt until smooth.
  3. Let cool slightly, then scoop tablespoon-sized portions and roll into balls. Roll in shredded coconut and place on a parchment-lined sheet. Refrigerate for 30 minutes to firm up.

Notes

If the mixture is too sticky, add more powdered sugar. You can also experiment with different coatings or flavors.
