- ½ cup powdered sugar
- 1 cup unsalted butter, softened

- 3 large eggs
- 1 cup fresh lemon juice
- Zest of 2 lemons

- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish. In a mixing bowl, combine flour and powdered sugar.
- Cut in the softened butter until the mixture resembles coarse crumbs. Transfer to the baking dish and press firmly to form an even layer.
- Bake for about 15 minutes until lightly golden.
- Whisk together sugar, eggs, lemon juice, lemon zest, baking powder, and salt in a clean bowl.
- Pour the lemon mixture over the baked crust and spread evenly.
- Return to the oven for another 20-25 minutes until set.
- Cool completely at room temperature and dust with powdered sugar before cutting into squares.
Notes
For a lighter option, substitute half the butter with unsweetened applesauce. Use fresh lemon juice for the best flavor, but bottled can work in a pinch.
