Description

A scrumptious and cozy dish featuring layers of ground beef, black beans, and zesty tomatoes topped with a creamy cornmeal mixture.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes with green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cornmeal
  • 1 cup milk
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped fresh cilantro for garnish

Instructions

  1. In a large skillet over medium heat, cook the ground beef and chopped onion until browned, about 5-7 minutes. Drain excess fat.
  2. Add black beans, diced tomatoes with green chilies, chili powder, cumin, garlic powder, salt, and black pepper; stir and simmer for 5 minutes.
  3. In a separate bowl, mix cornmeal, milk, and egg until smooth. Grease a 9×13-inch baking dish.
  4. Pour half of the cornmeal mixture into the dish, followed by the beef mixture, and then the remaining cornmeal mixture on top.
  5. Sprinkle shredded cheddar cheese and olives on top. Bake in a preheated oven at 350°F for 30-35 minutes until golden brown.
  6. Let cool for 10 minutes, garnish with cilantro, and serve.

Notes

You can prep the beef filling ahead of time and use low-fat or non-dairy milk for a lighter version. Experiment with different cheeses for added flavor.
