Ingredients

  • 2 cups granulated sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons espresso or brewed coffee (optional)
  • 1 cup all-purpose flour
  • 12 Cool Mint Oreo Cookies (hand-crumbled)
  • 1 7-ounce jar Marshmallow Fluff
  • 1/8 teaspoon mint extract
  • 8 drops+ green food coloring
  • 1/2 cup butter or margarine (softened)
  • 3 to 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Splash of milk (if necessary for consistency)
  • 3/4 cup white chocolate chips (melted)
  • 18 Cool Mint Oreo Cookies (hand-crumbled)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch pan with foil, spraying it with cooking spray.
  2. Melt baking chocolate and unsalted butter together until smooth.
  3. Whisk in granulated sugar, then add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla extract and optional brewed coffee.
  5. Gradually fold in all-purpose flour and hand-crumbled Cool Mint Oreo cookies.
  6. Pour batter into prepared pan and bake for 25-30 minutes until a toothpick comes out with a few moist crumbs.
  7. While brownies cool, combine Marshmallow Fluff, mint extract, and green food coloring.
  8. Spread mint filling evenly over the cooled brownies.
  9. For frosting, beat softened butter and gradually add powdered sugar until combined.
  10. Add vanilla extract and enough milk to reach desired consistency.
  11. Fold in melted white chocolate chips and spread over mint filling.
  12. Crumble remaining Cool Mint Oreo cookies on top for garnish.
