Ingredients
2 large cucumbers
1 cup crumbled feta cheese
2 tablespoons fresh dill, chopped
2 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
1 tablespoon white vinegar
1 small red onion, thinly sliced (optional)
Salt and black pepper to taste
Instructions
1. Dice cucumbers into half-moon slices and gently toss to remove excess moisture
2. In a large bowl, combine cucumbers, crumbled feta, and chopped dill
3. In a separate small bowl, whisk together olive oil, lemon juice, vinegar, salt, and pepper
4. Pour dressing over salad and toss gently
5. If using red onion, add and mix in
6. Let sit for 10-15 minutes at room temperature to allow flavors to meld
7. Taste and adjust seasoning if needed before serving

For a vegan version, substitute vegan feta
