Ingredients
1 lb beef (chuck or stew meat)
4 cups beef broth
2 cups water
2 carrots, diced
2 potatoes, diced
1 onion, chopped
2 celery stalks, diced
1 can (14.5 oz) diced tomatoes
1 cup green beans, cut into pieces
2 cloves garlic, minced
2 bay leaves
Salt and pepper to taste
1 teaspoon dried thyme
Instructions
1. In a large pot, brown the beef over medium heat until no longer pink.
2. Add chopped onions and minced garlic; sauté until translucent and fragrant.
3. Pour in beef broth and water, then add diced tomatoes, carrots, potatoes, celery, green beans, bay leaves, thyme, salt, and pepper.
4. Bring to a boil, then reduce heat and simmer for 1–1.5 hours until meat is tender.
