- 1 1/2 cups graham cracker crumbs
- 1/4 cup all-purpose flour
- 7 tablespoons unsalted butter, melted
- 2 1/4 cups granulated sugar or sugar substitute, divided
- 4 large eggs
- 1/3 cup fresh lime juice (about 5–7 limes)
- 1 teaspoon lime zest
- 1 tablespoon fresh orange juice
- 1 tablespoon of tequila, optional (or additional tablespoon of orange juice)
- Powdered sugar or sugar substitute for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×9 square baking pan with parchment paper.
- Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl until mixed.
- Press the mixture into the bottom of the pan and bake for 12 minutes until lightly golden.
- Whisk together eggs and remaining sugar in a bowl until frothy.
- Stir in lime juice, lime zest, and orange juice, adding tequila if desired.
- Sift in the remaining flour and whisk until smooth.
- Pour the filling over the baked crust and return to the oven.
- Bake for 23-25 minutes until the top is golden and set.
- Cool in the pan and dust with powdered sugar before cutting into squares.
Notes
Chill bars before serving to enhance flavors. Store in an airtight container in the fridge for up to 3 days.
