- 1 lb Chicken breast
- 2 cups Jasmine rice, cooked
- 1 cup Fresh vegetables (bell peppers, carrots, broccoli, or favorites)
- ½ cup Mayonnaise
- 2 tablespoons Sriracha
- 1 tablespoon Lime juice
- Salt, to taste
- Black pepper, to taste
- Green onions, for garnish
Instructions
- Prepare the jasmine rice according to package instructions. Fluff gently with a fork and set aside.
- Season the chicken with salt and pepper. Heat a skillet over medium-high heat and cook the chicken for 5 to 7 minutes per side until golden and fully cooked. Remove from heat and let it rest before slicing.
- In a small bowl, whisk together mayonnaise, Sriracha, and lime juice until smooth. To assemble, add rice to each bowl, top with sliced chicken and fresh vegetables, and drizzle with the spicy mayo. Finish with chopped green onions and serve immediately.
Notes
For a lighter sauce, use Greek yogurt instead of mayonnaise. Adjust the sauce for spice level to taste.
