Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 4 medium carrots, diced
- 3 large potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 4 cups beef broth
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove and set aside.
- Add the chopped onion and minced garlic to the pot; sauté until the onion softens, about 5 minutes. Stir in the tomato paste and cook for another minute.
- Return the beef to the pot, add the carrots, potatoes, thyme, bay leaf, salt, pepper, and beef broth. Bring to a boil, then reduce heat to low, cover, and let simmer for 2 to 3 hours.
- Once ready, taste and adjust seasonings. Garnish with fresh parsley before serving.
Notes
This stew can be made ahead of time and tastes even better the next day. Feel free to swap vegetables and meats based on availability and preference.
