- 12 ounces dried spaghetti or linguine noodles
- 1 pound large shrimp (shells removed and deveined)
- 5 cloves fresh garlic (finely minced)
- 3 tablespoons extra virgin olive oil
- 4 tablespoons unsalted butter (divided)
- 1/2 cup low-sodium chicken broth (or alternative liquid)
- Juice from one lemon (approximately 2 tablespoons)
- 1 teaspoon finely grated lemon zest
- 1/4 teaspoon crushed red chili flakes (optional)
- 1/2 cup finely grated Parmesan cheese
- 1 cup low-moisture mozzarella (shredded)
- 1/4 cup Italian flat-leaf parsley (chopped)
- 1/2 teaspoon freshly ground black pepper (or to taste)
- Kosher salt (to taste)
Instructions
- Cook the pasta in a large pot of well-salted boiling water until just shy of al dente; drain and reserve about a cup of pasta water.
- In a skillet, heat olive oil and 2 tablespoons butter over medium heat. Season shrimp with salt and pepper, then sear until just opaque and golden, about 1-2 minutes per side. Remove shrimp and set aside.
- In the same skillet, melt remaining butter, then sauté garlic and optional chili flakes for 30 seconds. Add chicken broth, lemon juice, and zest; simmer for 2-3 minutes to thicken.
- Toss cooked pasta in the garlic-butter mixture, add half of the Parmesan and chopped parsley, and gently fold in the shrimp.
- Transfer pasta mixture to a greased baking dish, top with shredded mozzarella and remaining Parmesan, and bake at 375°F (190°C) for 15 minutes until cheese is melted and golden.
- Garnish with remaining parsley and serve with a squeeze of lemon if desired.
Notes
Feel free to substitute shrimp with chicken or zucchini for a vegetarian twist. Adjust the recipe to your taste preferences.
