Creamy Garlic Shrimp Pasta

A comforting dish combining tender shrimp with a luscious garlic cream sauce, perfect for weeknight dinners.


Ingredients

  • 12 ounces dried spaghetti or linguine noodles
  • 1 pound large shrimp (shells removed and deveined)
  • 5 cloves fresh garlic (finely minced)
  • 3 tablespoons extra virgin olive oil
  • 4 tablespoons unsalted butter (divided)
  • 1/2 cup low-sodium chicken broth (or alternative liquid)
  • Juice from one lemon (approximately 2 tablespoons)
  • 1 teaspoon finely grated lemon zest
  • 1/4 teaspoon crushed red chili flakes (optional)
  • 1/2 cup finely grated Parmesan cheese
  • 1 cup low-moisture mozzarella (shredded)
  • 1/4 cup Italian flat-leaf parsley (chopped)
  • 1/2 teaspoon freshly ground black pepper (or to taste)
  • Kosher salt (to taste)

Instructions

  1. Cook the pasta in a large pot of well-salted boiling water until just shy of al dente; drain and reserve about a cup of pasta water.
  2. In a skillet, heat olive oil and 2 tablespoons butter over medium heat. Season shrimp with salt and pepper, then sear until just opaque and golden, about 1-2 minutes per side. Remove shrimp and set aside.
  3. In the same skillet, melt remaining butter, then sauté garlic and optional chili flakes for 30 seconds. Add chicken broth, lemon juice, and zest; simmer for 2-3 minutes to thicken.
  4. Toss cooked pasta in the garlic-butter mixture, add half of the Parmesan and chopped parsley, and gently fold in the shrimp.
  5. Transfer pasta mixture to a greased baking dish, top with shredded mozzarella and remaining Parmesan, and bake at 375°F (190°C) for 15 minutes until cheese is melted and golden.
  6. Garnish with remaining parsley and serve with a squeeze of lemon if desired.

Notes

Feel free to substitute shrimp with chicken or zucchini for a vegetarian twist. Adjust the recipe to your taste preferences.
