Description

Ingredients
2 lbs tomatillos, husks removed
2 ripe avocados
1 small white onion, diced
1 jalapeño, seeded and minced
1/4 cup chopped fresh cilantro
2 tablespoons lime juice
1 teaspoon salt
1 clove garlic, minced (optional)
Instructions
Roast tomatillos on a baking sheet at 400°F (200°C) for 15 minutes until blistered
Let cool, then transfer to a blender with avocados, onion, jalapeño, cilantro, lime juice, salt, and garlic (if using)
Pulse until chunky but combined
Chill for 30 minutes before serving
Notes
Roast garlic cloves on parchment paper for 10 minutes for a softer flavor
Store in airtight container for up to 3 days
